The Salad Shake Up


I recently picked up Salad Days, a little book chock full of salad recipes which are perfect for spring. I love making salads in the warmer months. They taste delicious and are so quick  and easy to throw together after a hard day at work.

Tomato and Onion Salad
The book is broken in to sections; side salads, veggie salads, feel-good salads, midweek salads, spicy salads and hearty salads.
Hot-smoked Salmon Salad
Each recipe clearly shows the preparation and cooking time required.
And the pictures are beautiful!
Prawn Noodle Salad
There are also extra guides on things like "Perfect Grilling and Griddling", "Perfect Grains" and "4 Classic Salad Dressings". Spoiler alert....

Caesar Dressing
To make about 150ml (1/4 pint) you will need:
1 medium egg, 1 garlic clove, juice of 1/2 lemon, 2 tsp Dijon Mustard, 1 tsp balsamic vinegar, 150ml (1/4 pint) sunflower oil, salt and freshly ground black pepper.
1. Put the egg, garlic, lemon juice, mustard and vinager into a food processor and whiz until smooth, then, with the motor running, gradually add the oil and whiz until smooth until smooth. Season with salt and ground black pepper.
2. If not using immediately, cover and chill for up to three days. Whisk Briefly before using. 
Note: As this dressing contains raw eggs, buy those with the British Lion mark and don't serve to vulnerable groups.
Quick Caribbean Chicken Salad
At the back there's also a really helpful Calorie Gallery which provides the full nutritional breakdown for each salad in the book. For example, the Egg Florentine Salad (below) contains 331 cal, 28g protein, 8g fat, 1g fibre, 37g carb and 2g salt. Useful eh?

This is a really great cook book that's just as pretty as it is useful. Plus at £4.99 for the paperback or £2.49 on Kindle, it's a total bargain.
