Sweet potato, leek and bacon cakes

This is how I like my food, delicious and a little rough around the edges. Today I thought I'd share a recipe with you. It's filling, healthy(ish) and super tasty. If you're being good you can skip the hollandaise sauce but it adds a tangy creaminess that works beautifully with the sweetness of the sweet potato and the saltiness of the bacon.

Serves 2 - 4


3 small sweet potatoes (the kind you get in a bag at the supermarket)
5 rashers of bacon
1 leek
4 eggs
A generous sprinkle parsley
A pinch of oregano
Salt and pepper to taste
(Optional) 4 generous teaspoons of hollandaise sauce - I use the jar stuff. You can make your own, but aint nobody got time for that.
